The Grocery Cart Challenge is doing a recipe swap today. So I figured I'd toss in a simple recipe that I did just the other day and remembered how much I loved! It's for Corn Casserole, and it's only a few ingredients, and pretty yum, if I do say so myself!
Ingredients:
* 1 can corn (drained)
* 1 can cream corn
* 1 box Jiffy corn bread mix (probably any kind would work)
* 1 egg
* 1 c milk
Grease pan w. butter or butter spray. Mix ingredients together and pour into pan. Cook at 350-degrees for 35-45 minutes. I often have to do it for at least 45, so the inside isn't gloppy. Check it w. a knife and if it comes out dry it's done. If you prefer the top to be more brown, throw it back in for 2-3 minute increments.
I use a small, round Corningware so it's kind of deep and that might be why I have to bake it for longer, but otherwise it might be fine for shorter if you use a metal baking pan.
