So I figure who can it hurt if I post a Simply Made Sunday on a Monday? Nobody, right?
I wanted to share what I'm making for dinner tonight. It's a simple (goes with the title!) crockpot meal, which I am looking forward to having later.
I'm in the process of trying to "clean out my freezer and pantry" to help save money on groceries. I go through phases where I do this, I find myself with a lot of extras around the house, and like to try to use them up for recipes, or for random meals throughout the week.
So for tonight I have the following ingredients:
* a decent sized portion of Tyson frozen chicken strips
* 1 can of black beans (drained and rinsed)
* 1 can of cheesy cheddar soup
* 1/2 soup can of chicken broth
* 1 package of Success boil-in-a-bag brown rice
Throw everything in but the rice, and let it cook for about 3-4 hrs. Picture below is pre-rice!
Add the rice in with about 1-2 hrs to go and it will absorb all of the broth and make a decent mixture for tortillas (which hopefully hubby will pick up on the way home tonight) or nacho/corn chips. Mmmn, yum. Serve with avocados, sour cream, shredded cheese, or whatever else makes it a meal for you and your family! Yum!
