Chocolate Rolo Surprise Cookies



It's that time of year again! Time for the annual Houseful of Cookies blog hop!!

What more could you want than a list of incredible recipes for you to enjoy and make for your loved ones this holiday season?

Nothing, right? I know, me, neither.

Houseful of Cookies is an annual, virtual cookie hop, hosted by Natasha Nicholes of Houseful of Nicholes. She really likes playing on the "Houseful" theme when there is more than one of something, and since there's more than one cookie ... here we are.

Each year Natasha gathers a bunch of us together from the internet to bake up our epic cookie creations and share them with all of you. It's a fun time, and we all have dealt with butter, flour, and a number of flavors to bring you these goodies every year.

I'm going to start you off with my recipe for this year's virtual cookie hop. I'm offering up one of the simplest of recipes for y'all.

Chocolate Rolo Surprise Cookies!!!!

Don't like Rolos? Sssssh. Switch them out to Reese's mini cups or Hershey's Kisses.

You won't regret any of these choices. Or. Get this. Don't put a surprise in the middle and just enjoy the cookies as they are. You'll still love them. Super simple.


Ingredients:

1 box chocolate cake mix*
2 eggs
1/3 c vegetable oil
Rolo chocolates
Holiday sprinkles (optional)

* devil's food cake works wonderfully, as does the chocolate fudge flavor

This recipe is so simple you can teach your kids how to do it and get them working on holiday cookies as soon as you buy the ingredients.

Mix together your cake mix, eggs and oil.




Upon creating your dough, be sure to grease your hands with some butter, oil, or an oil spray to avoid excessive stickiness. It was definitely stickier than I thought it would be.


Optional but fun addition to give these cookies a holiday boost: Holiday Sprinkles!


Bake at 350 degrees for 9 minutes.


You can also sprinkle them in powdered sugar, use cinnamon sugar, or whatever it is you prefer. Either way, the inside is going to look like this.




And yes, they are as delicious as you're imagining. Now go on and make yourself a batch. If you're so inclined, buy yourself a bag of mixed chocolates - Reese's mini PB cups, Hershey's Kisses, and Rolos all work incredibly well in this mixture. They're so good. So. Go make 'em.

You won't regret it. Or, maybe you will after you've eaten too many - but nah - it's the most wonderful time of the year! Make them and enjoy!
